Is there any way to further customize shapes that have already been created?
For instance, in the Windows and Dialogs stencil, if I selected Blank Form,
I can change the title of the form, but is there any way to change the title
bar from blue to, say, red?? If not, how do you go about customizing
pre-defined shapes?

It is a rather complicated shape and the title bar is only one of the
various fill colours. Not only that but the title bar colour is
determined by a formula, the shape's right-click -> Active Window menu
controls the colour.
However, menu View -> Drawing Explorer Window
find the shape within the Foreground pages section, it will be called
"Blank form" or "Blank form.n" where n is a number, choose the one you
want to modify. Within the Shapes section of this shape, select the
second one down, I have no idea what it will be called, but clicking
this will highlight the title bar on the shape. Use the right-click
menu and select Show Shapesheet.

Scroll down to the Fill Format section and look at the formula in the
fill forground cell, you will see that it uses one of two RGB formula,
edit these to use the colours you want.

You can create a new stencil and drag and drop your modified shape to
this new stencil.
